The structure where Ashbee Hotel is hosted was previously named Villa San Giorgio and it was a project by an English Architect names Charles Robert Ashbee. The project was entrusted by Colonel Shaw-Hellier when he bought a piece of land in Taormina just behind the church of St. Pancrazio. Architect Ashbee was invited by Colonel Hellier and asked him to build a house on that piece of land.
